My starting weight is 223 lbs. My waist is 47", and my hips are 50".
I created.a cheesy chicken and cauliflower skillet dish for dinner. Greg and Daniel said they liked it.
Cheesy Chicken with Cauliflower
Cut cauliflower into small flowerettes. Add 1 cup chicken broth to cauliflower in a skillet. Saute for 5 to 10 min. til cauliflower is tender.
Add 4 oz. cream cheese and 2 oz. cheddar cheese. Stir til melted. Add cooked chicken meat, 1 t. paprika, 1/2 t. dry mustard and simmer for 5 min. Serve.
Energy isn't as low as it has been for awhile.

I'm going to try to keep track of my efforts to lose weight, my struggles and triumphs, recipes, and other helpful information, as I pursue a low carb lifestyle.
My struggle is to be happy without grains and beans in abundance. How can I find delicious substitutes for those things, when can I add them back, how do I incorporate this into my food storage, and how to use all of this while keeping in my budget, are all a constant trial for me. Maybe as I keep this blog, I will discover the secret for success using a low carb diet.
